Brain-Boosting Quinoa Salad
Ingredients:
1 cup quinoa (or cauliflower rice for a low-carb option)
2 cups water
1 cup chickpeas (canned or cooked)
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup olive oil
Juice of 1 lemon
Salt and pepper to taste
Instructions:
Rinse quinoa under cold water. In a pot, bring water to a boil, add quinoa, reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork.
In a large bowl, combine cooked quinoa, chickpeas, tomatoes, cucumber, red onion, and parsley.
